Maple Glazed Pumpkin Muffins

Ingredients for muffins

  • 3 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 16-oz can of pumpkin
  • 3 cups all-purpose flour
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350F. Butter and dust with flour loaf pans, a muffin tin, or simply use baking cups.
  2. Beat sugar and oil in large bowl until blended. Mix in eggs and pumpkin.
  3. In a separate larger bowl, sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder. Stir into pumpkin mixture in 2 additions.
  4. Bake for 1 hour and 10 minutes for 2 equal loaves or 25-27 mins for muffins. The muffins are done when a tester in center comes out clean.

Ingredients for maple glaze

  • 1/4 cup of real maple syrup
  • 1 1/2 cups confectioners' sugar

Instructions

  1. Slowly add syrup to the sugar a little bit at a time until you reach a desired consistency, still thick but able to be drizzled.
  2. Drizzle over cooled muffins, then chill muffins to ensure it hardens just right. Enjoy!
