


Maple Glazed Pumpkin Muffins

Ingredients for muffins
- 3 cups sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 16-oz can of pumpkin
- 3 cups all-purpose flour
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
Instructions
- Preheat oven to 350F. Butter and dust with flour loaf pans, a muffin tin, or simply use baking cups.
- Beat sugar and oil in large bowl until blended. Mix in eggs and pumpkin.
- In a separate larger bowl, sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder. Stir into pumpkin mixture in 2 additions.
- Bake for 1 hour and 10 minutes for 2 equal loaves or 25-27 mins for muffins. The muffins are done when a tester in center comes out clean.
Ingredients for maple glaze
- 1/4 cup of real maple syrup
- 1 1/2 cups confectioners' sugar
Instructions
- Slowly add syrup to the sugar a little bit at a time until you reach a desired consistency, still thick but able to be drizzled.
- Drizzle over cooled muffins, then chill muffins to ensure it hardens just right. Enjoy!
